The Chef Solution

The Chef Solution’s Food Safety Auditing services are available to all Qld based food businesses including Caterers, and food providers in the Aged Care and Child Care Industries. I am an approved Qld Health food safety auditor providing onsite food safety program compliance auditing anywhere in Qld, and, conducting desk audits of proposed food safety programs for council accreditation. I also offer comprehensive menu reviews, training in commercial cookery and food safety and link you with a registered training organisation to have your training nationally accredited.

My hospitality service career spans 30+ years spread throughout country resorts, city hotels, restaurants, bistros and cafe’s providing me with an expansive industry and product knowledge. Highlights throughout my career include achievements, awards and qualifications obtained to further my cooking career as a chef both domestically and while resident in the UK as personal culinary assistant to celebrity chef and industry pioneer Mr Anton Mosimann. My knowledge of, and experiences working within, a range of commercial kitchen operations provides for a genuine industry based and realistic auditing service and a more practical and common sense approach.
Since 2004, my professional development has been towards teaching Cookery / Hospitality obtaining my Certificate IV in Training and Assessment (TAA40104 / now TAE40110) and Diploma of Hospitality Management. In 2008 I joined TAFE QLD at their Gold Coast Institute (2008-09) and Southbank Institute of Technology (2009-10). I am a qualified trainer and assessor in commercial cookery and food safety, currently delivering from the Tourism, Events and Hospitality training package (SIT07), Health Industry (HLT07) and Food Processing (FDF03) training packages, and, also through corporate in house training or through private training organisations.
I have a strong focus on the Australian Quality Training Framework, Food Safety and Risk Management auditing gaining a Diploma of Auditing (Quality and Food Safety Management Systems) with SAI GLOBAL. Professional development has included development of Environmental management systems and in sustainable work practises within the hospitality industry, and, Microbiological study at QUT involving theory and practical application in pathogenic bacteria and viruses, infection control and outbreak prevention.
As ‘The Chef Solution’, I operate primarily as a regulatory food safety auditor approved through QLD Health as a compliance food safety auditor under the Food Act 2006. Since 2008, I have completed over 700 compliance audits to date through varying types of food businesses. I offer my services within the Aged Care and Child Care sectors, public and private catering businesses and also provide commercial cookery and food safety related consultancy services to other industry operators outside of my regulatory commitments.
In my role as a food safety auditor, I employ a systematic approach towards a thorough review of recording documentation maintained by each business as part of their own council accredited food safety programs, a high degree of operational knowledge of commercial kitchen environments, observatory skill in assessing procedural compliance with safe food handling practices and food processing, effective communication skills, and, skills and knowledge applied in the mandatory report writing for businesses and local councils as per my requirements of my code of conduct under my QLD Health approval. This makes for a very professional and thorough service to you.
